For much of my life, I had a love affair with carb-heavy,
processed foods, and meat was a regular staple in my diet. However, my
perspective shifted when a close family member was diagnosed with cancer and
decided to adopt a 100% whole food plant-based diet. In an effort to show
support, I embraced the lifestyle change and eagerly immersed myself in the
world of plant-based nutrition by binge-watching health documentaries and
reading books by featured doctors. My newfound knowledge about the role of
diet in preventing cancer and promoting optimal health was eye-opening.
As I experimented with different plant-based foods, I discovered the
incredible impact of diet on overall health. For example, incorporating
sweet potatoes and brown rice into my diet helped cure my acne and prevent
heart disease. I also learned that pairing leafy greens with citrus fruits
could enhance iron absorption rates, and that beans and rice could provide a
complete protein source.
In addition to the personal health benefits, I became passionate about the
sustainability benefits of plant-based eating. The impact of animal
agriculture on the environment is significant, and choosing a plant-based
diet can significantly reduce one's ecological footprint. I also sought to
make small changes in my daily life, such as using reusable beeswax wraps
and a foldable straw.
My passion for plant-based eating led me to co-lead a local group dedicated
to promoting the lifestyle and encouraging restaurants to create
plant-based, oil-free menu options. I am even pursuing my dream of opening
an affordable, plant-based oatmeal cafe, where I hope to educate people
about the benefits of a whole food, plant-based diet in a delicious and
accessible way.
Through my personal journey, I have discovered that cooking and experiencing
healthy, delicious foods firsthand is one of the best ways to educate others
about plant-based eating. And as a result of my lifestyle change, I have
more energy, excel in physical activities, and feel happier and healthier
overall. While I still consider myself a picky eater, my preferences have
shifted towards plant-based options, and I am proud to call myself a "vegeholic." |
