By now, most of us know, we should avoid food containing artery-clogging trans fat. But New York city is taking it a step further. Today, New York's health commissioner urged all of the cities 20,000 restaurants to voluntarily stop using it.
Trans fat which is basically a chemically modified butter substitute is considered but doctors and nutritionists to be a leading culprit in heart disease. New York's health commissioner goes so far as to compare to asbestos and lead in terms of its threat to public health.
And despite warnings from the federal government about the danger of trans fat, city food inspectors found up to 60% of New York restaurants are using it to cook with. New York won't outright ban the use of trans fat but it is trying to educate the food industry about how to live without it.
Some restaurants have already given it up but they find that healthier substitutes like butter and canola oil are more expensive. New York - famous for fighting crime - now also a leader in fighting fat.
It is now the first major American city to launch a campaign against trans fat.
